You are all familiar with our manager Joseph Pocceschi’s beaming smile that welcomes our guests. Joseph has been with us for quite a few years now and runs a tight ship front of house.
We asked Joseph a few questions in our series of quick interviews - 'A Minute or Two on the Clock'
1. Who inspired you?
Mixed feelings between my parents and their restaurant, where I lived most of my life, and the first great chef I worked for: Marc Meneau at L'Esperance in St Père-en-Vézelay, Burgundy - my first three star experience.
2. An early fond food memory?
The pineapple frozen soufflé of my Dad's restaurant. I was always waiting for the end of service and guests to leave so that I could sneak out of my bedroom, and sit eating some in the staff dining room, enjoying it so much, while waiting for my Mum to finish work.
3. Late night snack?
This is multi-cultural and nostalgic - toasted sandwich based on sucuk, Turkish beef sausage and Ossau-iraty cheese (a Franco-Basque one made from sheep milk and one of my favourites) with spicy tomato paste.
4. Favourite tipple?
The Herefordshire William Chase gin with tonic, and a fresh slice of Granny Smith apple.
