You trained as a stonemason – what made you choose that?
After finishing school I had to decide what I wanted to do with my life. At that time I had no particular goal or ambition. All I knew was it had to be something that involved art. When my mum suggested training as a stonemason I looked into it and I guess it must have appealed, because I ended up studying it for four years at art school!
How did you find yourself working in front of house from that?
After my four years at stonemason school, I knew I didn’t want to do this as a day job for the rest of my life. My dream was to work in Japan, but knowing I wouldn’t be able to work there as a stonemason, I chose a profession which has given me the opportunity to work and travel in different countries.
What is it about the hospitality industry that you particularly enjoy?
The rush of the service – so I suppose the adrenalin buzz that it offers
What’s your favourite drink?
Motorcycling, sculpting, watching movies
When I went to Japan on holiday, I visited a Ramen shop (noodle bar) and ordered Ramen and Gyoza (Gyoza is a Japanese dumpling). When they served it they didn't tell me how hot it was, so I burnt my tongue badly but I really liked the dumplings. I have loved them ever since, and wherever they are available I eat them.
